Event topic
Tipsy Chicken meets Bavarian meadow fish – from the brewery and the fields to the plate via extrusion
A presentation by Carl Dolgow COLLIN, Lab & Pilot Solutions GmbH and Dr. agr. Johannes Schmitt, ERBACHER the food family, Josera Erbacher Service GmbH & Co. KG

What do brewer’s yeast, clover grass and modern extrusion have in common? They open up new avenues for the production of food and animal feed.
Using practical examples, this presentation demonstrates how this can be achieved. In the process, by-products from the brewing industry and locally grown feedstuffs are upcycled into protein sources for human consumption. The possibilities of upcycling and the influence of raw materials and extrusion conditions on texture, functionality and product quality are explained in a clear and accessible manner.
